Quick Lunch Salad with Creamy Cilantro Avocado Dressing
Grab whatever greens you have on hand (Dark, leafy greens are best vs. iceberg lettuce)
Chop fresh veggies and keep them on hand for the week to remake this salad when you need a quick lunch. You may enjoy things like:
Red, yellow and orange bell peppers
English cucumbers
Sliced carrots
Celery
Tomatoes
Sugar snap peas
Broccoli
Cauliflower
Radishes
Zucchini
Avocado
Purple cabbage
Pepita seeds (optional)
Crumbled goat cheese or feta (optional)
To add more protein: top with sauteed wild caught shrimp, pull some meat off of a rotisserie chicken or prep some grilled chicken or salmon to keep on hand.
Creamy Avocado Cilantro Lime Dressing
Prep Time 1 BATCH 5 MINUTES
1 large avocado
1 handful cilantro about 1/2 cup
1/4 cup olive oil
2-4 tablespoons water (thin to taste)
lime juice or lemon from 1 lime/lemon
1 large garlic clove
1 teaspoon sea salt to taste
In a blender or food processor combine all ingredients for dressing until smooth. Store in the fridge for 5-7 days.
