Buckwheat and Berries Protein Packed Porridge

Serves 2

  • ½ cup buckwheat groats (I like Bob’s Red Mill Organic Buckwheat but you can buy it in bulk from the bins too)

  • 1 ½ cups water

  • ⅛ tsp sea salt

  • 1-2 Tbsp organic ceylon cinnamon (I use ceylon cinnamon for the health benefits. You can buy it on Amazon.)

  • ½ tsp organic vanilla extract

  • unsweetened almond milk (optional)

  • berries of choice

  • Banana (optional)

  • 6 Tbsp hemp heart seeds (these are packed with protein and healthy omegas)

  1. Bring water and sea salt to a boil. Slowly whisk in buckwheat, reduce heat to medium-low. Stir in cinnamon and vanilla extract and cook, stirring occasionally, for 10 minutes. Remove from heat and let stand 2 minutes.

  2. Add to a bowl. Add almond milk to thin the mixture out to your liking. Add 3 Tbsp of hemp heart seeds to each bowl. Finish by topping with raspberries, blueberries, bananas, strawberries or whatever makes you happy!
